1 Type text i.e. 'arrows'
You can type any text via the type tool - arrows was used for the example
2 Select text
3 Layer > Type > convert to shape
The text is now a shape and cannot be re-used as text (though you can always undo at this stage)
4 Go to the shape tool
5 Select the 'shape layer' option on the options bar
The shape to be created is a shape layer, this wouldn't work for a fill pixel shape
6 Click the pathfinder option you want
I selected intersect but you could just combine or subtract from the existing shape
7 Drag shape tool and release to create shape
Apply the shape over the top of the existing text / type shape
The shape is now combined with the text / type
