The arrow custom shapes can be combined with text / type. See an example below

Type text i.e. 'arrows'
You can type any text via the type tool - arrows was used for the example

Select text

Layer > Type > convert to shape
The text is now a shape and cannot be re-used as text (though you can always undo at this stage)

Go to the shape tool

Select the 'shape layer' option on the options bar
The shape to be created is a shape layer, this wouldn't work for a fill pixel shape

Click the pathfinder option you want
I selected intersect but you could just combine or subtract from the existing shape

Drag shape tool and release to create shape
Apply the shape over the top of the existing text / type shape
The shape is now combined with the text / type
